Simon, Margaux

Margaux got a master degree in chemical sciences from University of Namur in 2018. Between 2018 and 2019 she studied brewing engineering at UCL (advanced master). Since she graduated, she became PhD student in the unit of brewery and food sciences runs by Prof. Sonia Collin at UCL. Her thesis project is focusing on research of innovative ways to improve the organoleptic and nutritional quality and stability of NABLABs beers. Focus on aromas, bitterness, polyphenols and their fate of aging
