Stefan Pieczonka studied Food Chemistry at the Technical University of Munich (TUM) and completed the Master of Science degree in 2017 with an award-winning thesis. Afterwards he started his PhD at the Chair of Analytical Chemistry (TUM) about the ‘Comprehensive molecular characterization of the complex beer metabolome by high-resolving analytical techniques’. His studies included, among others, molecular signatures of Purity Law relevant carbohydrate sources and a comprehensive description of the complex Maillard reaction network in beer brewing using a holistic, non-targeted approach novel to the field.His latest work, finalizing the PhD studies, is about the analytical investigation of a historical beer of the German Empire era that hides cultural information of the past.
